• 2 Cups Mixed Greens or Lettuce
  • Diced Fresh Tomato
  • Sliced Red Onion
  • Diced Cucumber
  • Shredded Cheese
  • Crumbled Bacon
  • Croutons
  • 1 Grilled Chicken Breast

Sometimes there’s no reason to cook at all.  If you have enough leftovers, you can essentially create a meal from scratch.

Don’t get mad, but this isn’t so much a recipe as it is an idea or concept.  One of my favorite things to order at a restaurant is a grilled chicken salad, and it is one of the easiest things to make at home if you plan ahead.  I listed the ingredients I typically have on hand and use in my salad, but these can really be anything you have or like.  Hell, this can even be steak or shrimp – whatever.

If you’re grilling chicken for dinner one night, grill an extra breast for later in the week, or use it for a lunch salad the next day.  Chop up some fresh veggies, maybe some bacon and add your favorite dressing.  Voila!  You’re done.

Another thing you can do is to spice your chicken with some taco seasoning and add some black beans and tortilla strips to the salad.  Mix some ranch with your favorite salsa and you have a southwestern salad.  See how easy this is.  I could go on and on, but I won’t because you can take it from here.
